"kserotigana"
Fried savory pastry
filled with Graviera cheese

Ingredients:
For 6 pieces
a dose of dough
Sweet Graviera cheese cut into slices (Graviera cheese is a hard Greek cheese with a slightly sweet and nutty flavor)
Thyme honey
Sesame seeds
For the dough preparation process, see here

Instructions:
Instead of cutting the dough into four strips, as mentioned in the "Traditional Fried Honey Pastries from Chania" recipe, we cut it once in the middle.
We take one sheet of dough and place the Graviera cheese, cut into thin strips, near the edge.
We fold the sheet so that the Graviera cheese is covered, and press the edges firmly with our fingers to make sure they seal.
We leave the beginning and the end without Graviera cheese and press them well to seal the dough.
We cut all the edges with the dough cutter and fry it like the fried honey pastries.
After taking it out and letting the excess oil drain, we drizzle honey over it in thin lines and, finally, sprinkle the sesame seeds.
