Fried savory pastry stuffed
with anthotyro cheese cream
Ingredients:
For 6 pieces
a dose of dough
300 g anthotyro cheese (anthotyro cheese is a Greek cheese made from sheep's or goat's whey)
1 pinch of vanilla
20 g cornstarch
1 egg
50 g sugar
Thyme honey
Flaked almonds

Instructions:
In a bowl, we add the anthotyro cheese, the egg, the sugar, the cornstarch, the vanilla and mix well.
We transfer it in a plastic piping bag with a small opening.
Instead of cutting the dough into 4 strips as mentioned in the "Traditional Fried Honey Pastries from Chania" recipe, we cut it once in the middle.
We take one sheet and place the cream near the edge, forming a narrow strip.
We fold the sheet so that the cream is covered, and press the edges firmly with our fingers to make sure they seal.
We leave the beginning and the end without cream and press them well to seal the dough.
We cut all the edges with the dough cutter and fry it like the fried honey pastries.
After we take it out and let it drain a bit to remove the excess oil, we add some honey on top in lines, and finally, add the toasted flaked almonds.
