Leek pie

ingredients for the recipe:

1 1/2 packet fresh phyllo rustic dough

360 gr anthotyro cheese

650 gr mizithra cheese

260 g leeks or 2 medium leeks

2 eggs

3 pinches of salt

2 bites of pepper

Olive oil

1 baking pan diameter 29 cm

Medium oven for about an hour

Execute recipe 

Chop the leeks and fry them in olive oil until cooked.

Let them cool.

Then put the cheeses in a bowl, leeks, eggs, salt and pepper

and mix well.

Grease a baking pan, add a phyllo sheet, crumple it to fit all in the baking pan and grease it, repeat until the sheets are 4, pressing them a little on each sheet. Add the mixture, flatten it everywhere evenly and add the rest of the phyllo sheets, oiling each time and on the last phyllo sheet add more oil. Cut it with a knife without joining the cuts

Just before putting it in the oven, wet it with a little water

Bake it in a medium oven for about an hour until the leaves are golden brown

If you want, replace the mizithra cheese and anthotyro cheese with feta cheese.
