
Wine Cookies
Traditional Cretan wine cookies


Ingredients for a platter
75 g extra virgin olive oil
75 g sunflower oil
130 g sugar
130 gr Romeiko wine*
58 g Orange Juice Concentrate BIOXYM
5 g baking soda
5 g baking powder
2 g cinnamon
1g cloves
450 gr flour (soft or all-purpose flour)
For above
160 g sesame seeds
Half a cup of water
10 g sugar
Instructions:
In a bowl, add the olive oil and sunflower oil. Add the sugar and mix with an egg whisk. Add the baking powder to the wine, stirring them and add them to the bowl and stirring again. Add the cinnamon and cloves. Put the baking soda in the orange juice, stirring them and add it to the bowl and mix well. Be careful because the baking soda will rise so that the bowl is large so that it does don't spill. Add the flour , stirring constantly. The dough will be quite soft . If you want, shape each cookie 20 gr. After shaping the cookie, lightly pass it through the sesame seeds to stick. Join the edges and place it in a baking pan with parchment paper. Bake in a medium preheated oven for 30 to 40 minutes. They are ready when we press them and they are hard. The normal recipe doesn't need more flour. The dough will be very soft. Let it rest for about half an hour and shape the cookies as gently as possible. If you think you won't be able to add a little flour, but the more flour you put in, the harder the cookie will become
For the topping:
Dissolve the sugar in the water and add them to the sesame seeds and mix well.
*Romeiko (Greek: Ρωμαίικο or Ρωμέικο) is a red grape variety indigenous to Greece. Its name derives from the term Romios that is used to refer to modern Greeks (literally Roman as a citizen of the former Byzantine Empire).
